There are different opinions on the formation of the Hakka people. The latest version is that it began in the 15th century, and it has gone through 500 years. Hakka Studies was established in the 1930s, and it has been 70 years since. The true picture of the development process lacks clear images. Hakka culture is a culture created by people, including Hakka dialect, drama music, dance, crafts, and folk customs. In terms of food culture, the Hakka people mostly migrate and live in Hakka areas. They sweat a lot and need to add salt to maintain their physical strength. Therefore, they tend to eat heavy, oily and salty dishes, and they are easy to use various processed pickles. Dishes are used as ingredients in dishes. The Hakka people are diligent and thrifty. They usually save money. They only slaughter livestock during the New Years and Synopses to worship their ancestors and gods, or to banquets at weddings and funerals. In order not to waste ingredients, we must carefully use all parts of livestock to make delicious dishes. Since its evolution, it has formed eight standard dishes for banquets of "four stew and four stir-fry".

The establishment of the "Research Office of Local Hakka Cultural Industry" in this research office aims to study the local cultural industry of Hakka in Miaoli. Because Hakka is an interactive development of two types of "conscious construction" and "local research", this laboratory combines the teachers of the Department of Cultural Tourism Industry to focus on the local conscious Hakka cultural industry subject, research and construct " Miaoli Hakka Local Cultural Industry Research History" to discuss the knowledge system of the local Hakka cultural industry.
